My “Whatever’s in the Kitchen” hot lunch took just 8 minutes to make today:
- Sauté a small, chopped RED PEPPER in CANOLA OIL SPRAY + OLIVE OIL with spices (I used smoked paprika, McCormick Brown Sugar Bourbon seasoning, and fresh rosemary)
- Add about a cup of canned, drained, KIDNEY BEANS and a little WATER
- A few minutes later, throw in a handful of ARUGULA
- Pour into a bowl and top with FETA
You can substitute any vegetable, spice, bean, green and cheese and it’ll still be healthy and tasty.
