Give Purple Snap Peas a Try

Purple snap peasPurple snap peas caught my eye at the farmers market this week, so I brought them home and lightly sautéed them in olive oil, added a splash of reduced-sodium tamari just before removing from the skillet, then topped them with sprinkling of roasted sunflower seeds. Divine!

Dr. Alan Kapuler, who developed these “Sugar Magnolia Snap Peas” for Peace Seeds, suspects that their purple color is a type of antioxidant pigment called anthocyanins. It’s the phytonutrient that gives blueberries, eggplant and other purple or blue vegetables their color..
